Oatmeal Raisin CookiesBy Kelly D.These oatmeal raisin cookies are moist on the outside and just the right amount of crispy on the edges. Yes, they are made with shortening. You can sub another type of oil, but there's something about shortening that makes these taste so delicious. The spices are mostly optional. Definitely keep the cinnamon and swap out the other spices for nutmeg, or allspice. The Turbinado sugar topping right before baking adds a touch of extra sweetness and crunch.

You can make it extra spicy with added cyanne pepper or siracha. Don't like blue cheese? Use mozzarella or more cheddar. This dip is really versatile!

The meatballs are bite-sized and super moist due to the bechamel that is added to the meat mixture. I love the rich flavor of pork and beef, be turkey could be used as well, producing a leaner meatball, but not as tasty in my opinion. The cilantro and lime give the soup a spanish flair, but omitting either will still produce an outstanding flavor. This soup freezes great too!
Miso Ginger Poached RockfishBy Kelly D.Light, delicious, and full of flavor, this poached rockfish recipe is extremely versatile and is done in under 30 minutes. A perfect weeknight meal but impressive enough for a dinner party. It's paleo-friendly but soba noodles added to the broth or a side of rice can be added for the carb lover at the table. Any white fish can be used and any combination of veggies of your liking can be added to the saute pan. To make it more of a fish soup, just add more broth and aromatics if you like. It's great on its own, or serve with smal cucumber salad. I purchased all items at Trader Joe's.
Pasta Alla Vongole and FriendsBy Kelly D.Pasta Alle Vongole, also called linguini with clams, is an Italian classic. My version kicks it up a bit, adding shrimp and mussels for a variety of flavors and textures. I also add parmesan and pecorino at the end, making the sauce a bit creamier and in my opinion tastier. Manila clams are optimal, but whatever you can find fresh from your fish monger will do. This quick and easy dish is great for a weeknight and impressive when served to guests.
Smash BurgersBy Kelly D.80/20 ground beef mixed with Worcestershire Sauce, fish sauce and rolled into 4 oz balls. Smashed on the grill, topped with melty cheese. So good!
Zucchini FritteBy Kelly D.OMG the Crunch! This delicious appetizer is adapted from Maggianio's original recipe. Zucchini haters will love this dish, especially when dipped into the lemony aioli. You must not omit the cornstarch as this ingredient brings the crunch and is just not the same without it. A fantastic appetizer or even dinner! Just add a salad and serve with a bottle of crisp Sauvignon Blanc. You won't be dissapointed.
